Miso- Tahini Spaghetti with a Soy cured Egg Yolk

Spaghetti, but make it Umami. This recipe is all about bold flavors with minimal fuss, perfect for those nights when you want something indulgent without spending hours in the kitchen. The creamy tahini adds a nutty richness, while white miso brings that deep, savory umami punch. The soy cured yolk acts like nature’s most luxurious sauce, oozing into the noodles and adding a salty, velvety finish.



Miso-Tahini spaghetti with a Soy Cured Egg Yolk

Recipe:

Serving size: 2-3

Total time: 25 minutes

Ingredients:

• 12 oz/ ½ bag of spaghetti

• 4 garlic cloves, minced

• 2 tbsp white miso

• 3 tbsp tahini

• Zest of 1 lemon + juice of ½ lemon

• Reserved pasta water (about 1 cup)

• Freshly grated Parmigiano-Reggiano

( approx 2oz, measure with your heart)

• Salt, to taste

• 1 egg yolk

• 1 tbsp soy sauce (for curing the yolk)

• Furikake, for garnish

Instructions:

1. Cure the Egg Yolk:

• Place the egg yolk in a small bowl with soy sauce. Let it cure for 10 minutes to get that glossy, umami-rich finish. Set aside.

2. Cook the Pasta:

• Boil the spaghetti in salted water until al dente. Reserve about a cup of pasta water before draining.

3. Build the Sauce:

• In a sauté pan over medium heat, add a drizzle of neutral oil (if needed) and sauté the minced garlic until fragrant.

• Stir in the miso until it melts, then add a splash of pasta water to loosen the mixture.

• Whisk in the tahini, then gradually add more pasta water until the sauce becomes silky and luscious.

• Brighten it up with lemon zest and a squeeze of lemon juice.

4. Toss the Pasta:

• Transfer the sauce to a large bowl. Add the hot spaghetti and toss vigorously until well- coated.

• Fold in freshly grated Parmigiano-Reggiano, more lemon zest, and a pinch of salt to taste.

5. Plate & Garnish:

• Twirl the pasta onto a plate, sprinkle with furikake, and finish with extra Parmigiano.

• Top it all off with the glossy soy-cured egg yolk right in the center for that rich, umami punch. Enjoy!
